How to cook perfect Shrimp scampi

Shrimp scampi is not oily pasta.
Shrimp scampi is timing, acidity balance and heat control.
Miss 30 seconds and you turn shrimp into rubber.

This is a clean, repeatable blueprint to cook
elite shrimp scampi with garlic & lemon (2 portions).

1. Understand The Goal (This Is NOT Overcooked Shrimp)

Elite scampi must be:

Juicy shrimp
Light, glossy sauce
Clean garlic aroma
Fresh lemon finish

If shrimp curl into tight circles — you failed.


2. Ingredient Discipline (Exact Measures – 2 Portions)

Raw large shrimp (peeled & deveined)
300 g

Salt
½ tsp

Black pepper
¼ tsp

Olive oil
1 tbsp

Butter
30 g

Garlic (thinly sliced)
3 cloves

Dry white wine (or stock)
80 ml

Fresh lemon juice
1½ tbsp

Lemon zest
½ tsp

Chili flakes (optional)
¼ tsp

Fresh parsley (chopped)
1 tbsp

Optional base (if serving with pasta):

Spaghetti

3. Shrimp Preparation (1 Minute)

Pat shrimp completely dry.

Season with:

Salt + pepper.

Do not marinate.

Shrimp do not wait.


4. Pan & Heat Setup

Wide pan.

Heat on medium-high:

1½ minutes

Add:

Olive oil → 1 tbsp


5. Shrimp Sear (The Critical 90 Seconds)

Add shrimp in a single layer.

Cook:

45 seconds

Flip.

Cook:

30–40 seconds

Remove shrimp immediately.

Set aside.

They must be:

Just pink
Still soft


6. Garlic Phase (30 Seconds)

Lower heat to medium.

Add:

Butter → 30 g

Add garlic.

Cook:

20–30 seconds

Do NOT brown.

Garlic burns fast.


7. Deglaze & Sauce

Add:

White wine → 80 ml

Increase heat slightly.

Simmer:

60–90 seconds

Reduce by about one-third.


8. Finish & Emulsion (30 Seconds)

Lower heat.

Add:

Lemon juice
Lemon zest
Chili flakes

Return shrimp to pan.

Toss:

20–30 seconds

Add parsley.

Stop immediately.


9. If Using Pasta

Boil spaghetti.

Reserve:

4–6 tbsp pasta water

Add pasta directly to pan.

Add pasta water.

Toss:

30 seconds

Sauce must lightly coat.


10. Texture Reality Check

Elite scampi feels:

Shrimp soft and juicy
Sauce glossy and light
Garlic aromatic, not bitter

If your shrimp are:

Rubbery → overcooked
Oily → no emulsion
Bitter → burnt garlic

The fork exposes you.


11. Finish

Extra black pepper.

Tiny drizzle olive oil (optional).

Serve immediately.
